WHAT YOU WILL LEARN:
- Putting together a fabulous 4-course plant-based dinner, using a variety of ingredients and techniques:
- Make a delicious soup with fresh stock as the base
- Mix and shape a flavourful flatbread to serve with the soup
- Learn about tofu preparation for a delicious starter
- Prepare, mix & shape croquettes for mains, accompanied by a smooth cashew sauce and steamed vegetables
- Mix, roll and fold potsticker desserts with an accompanying sauce.
- Preparing a wholesome 3-course plant-based brunch, using a variety of ingredients and techniques:
- Making energy balls to serve with fresh fruit
- Mixing and baking delicious mini muffins
- Preparing and baking an oven frittata, using tofu and aquafaba
- Make chocolate brownies to end it all.

The world is exploding with new adventures. Our days are filled with more learning and knowing than ever before in all spheres of our daily lives. With all this new knowing we are also cultivating a new understanding of life, a new consciousness. We are becoming aware of the extraordinary, the previously accepted but now being frowned upon, the previously unaccepted but now the norm.
Nowhere else in our lives is this as prevalent as in our eating habits. Suddenly we are all ‘foodies’, we’re becoming far more discerning in what we eat than the previous generation. We grow heirlooms, forage and buy local foods. Every meal is an event. We look for reasons to make merry, to eat well and drink lavishly. And quite rightly so – because food is the greatest gift from the Earth and should be part of celebration.
We are also becoming acutely aware of the quality of our food, where our food comes from, how it is grown and bred and what is involved in this process. Organic, crop rotation, mono vs multi culture, companion planting, free-range, ethically farmed, grass-fed, humanely raised and even humanely slaughtered are all terms we’ve come to know in a short space of time.
On our journey with food for the past decade or two we’ve also stumbled upon some very uncomfortable revelations. We’ve discovered that not all our food is what we thought it was, it is not grown or raised in the way it used to be. Instead, modern agriculture has let us down, the big corporates and capitalism’s clever marketing has blinded our eyes and numbed our consciousness through non-disclosure and false advertising. The disturbing truth is that our food is ‘manufactured’ behind closed doors in appalling conditions, beyond the horizons where the eye cannot see, raiding the soil and the environment, the air that we breathe, the water that we drink, poisoning our bodies with numerous chemicals. Food is produced in countries where there are no laws and destitute people are slaving for less than a minimum wage, becoming commodities just like the sentient beings that are slaughtered by the millions every day – all in the name of food on our dinner tables.
The more we know however, the more we want to know, and we start questioning – that is the cycle of knowledge that rolls like a ball. Once you know, you can’t un-know. In fact you are urged by your awakened curiosity and inherent call to ethics to delve deeper and thoroughly, leaving no stone unturned. The truth is staggering, to say the least. We stand aghast and in disbelief when we realise the power of ignorance and unconsciousness. Where have we been? What have we been thinking? How is it possible for well-meaning and honest people like us not to see beyond the facade of a modern lifestyle?
We realise, in retrospect, that ignorance is not bliss. We want to make right all in the world that has gone wrong. We want to stop the bus and get off, haul everyone with us so the damage, the pain and suffering can stop. We want to restore the destruction, we want to revel in the beauty of everything that is natural and we want to make right for those we have unknowingly wronged. We want to live in a beautiful world.
