This is a soup for your soul… a dish to warm your heart and truly nourish your body.
We have been making this soup since our children were really young (they called it mamma-kos) and it has stayed a favourite throughout the years, now also enjoyed by the many guests that visit when the weather is cold and the fire is roaring in the fireplace.
It keeps for a few days in the fridge and freezes well. It is a good idea to portion it and just whip it out on difficult nights when you are short of meal prep time, but still need to nourish the family sufficiently. It is a one-pot meal with a lot of nutrition. Add a delicious ciabatta bread to scoop with!
Note that we always use smoked paprika in all our recipes and it really makes a difference. Try and find some!
