he Seedling Vegan Kitchen at Old Joes Kaia just outside Nelspruit in Mpumalanga is the centre point of producing products for the online offering, making it possible to enjoy many of its excellent fair at home. It furthermore hosts Vegan Kitchen Adventures for those wanting to learn more about the benefits and pleasures of preparing vegan food. Dehydrating food has become part of its everyday activities. Vegan fair that aims to broaden the scope of available foods.
No animal products or derivatives are served or used in the preparation of the dishes. This means a lighter footprint on the environment and ultimately the planet, lightening the load caused by animal farming and production. It also means a healthier way of eating, not using products with high fat and cholesterol content, no secondary antibiotics or hormone ingestion. It contributes to a cruelty-free world where all sentient beings on earth are considered and given the right to freedom and life.
Marian Cottle is a vegan chef with extensive training and facilitation experience in various fields. She was instrumental in converting Old Joe's Kaia’s kitchen to The Seedling vegan restaurant.

The Seedling presents Vegan Kitchen Adventures on-site in its own kitchen, 3-4 times a year. These workshops aim to introduce vegan cuisine, upskilling the vegan cook’s know-how, as well as imparting techniques to cooks and chefs in the hospitality trade who are not familiar with vegan requirements. Food intolerances and allergies are among the topics that are discussed.
A workshop typically runs over a 2-night period with capacity for 10 participants. Tasks include the preparation of dishes under guidance for a breakfast, tea and 4-course dinner. Participants are accommodated on-site.
Off-site Interventions – Workshops & Demonstrations
The aim of these workshops is to empower and optimise the hosts existing facilities to produce magnificent and tasty vegan meals. From elaborate and luxurious kitchens to the most basic open fire facility, workshops are customised accordingly and normally include the use of local produce in the recipes.
Old Joe’s Kaia has partnered with Dryers For Africa in leading the way of securing food for the future and demonstrating the use of a dehydrator as a tool in this process.
