MEATLESS MONDAY: Confetti Cakes
Welcome to The Seedling Plant-based Kitchen!
We are so excited about the interest in pursuing plant-based eating, and just as excited about the opportunity to bring you some recipes and new ideas.
Thank you for being here, for acknowledging that the world (the planet, the animals and us) need to make some changes to the way in which things are done, starting with how food is produced and what is involved.
MEATLESS MONDAY has become an institution in such a short space of time. Everyone understands what it means and how it is impacting our world. Remember that for every 3 meatless meals of food served, one animal’s life has been saved.
IMPORTANT: Please let us know what you think of our recipes – have you made it? was it easy enough? was it tasty? Feel free to contact us on marian@oldjoes.co.za, and if you are happy with it all please, post some pictures on The Seedling Plant-based Kitchen and tell the world – thank you so much in advance!
If you are going to be cooking with us, please take the time and spend the money on a good digital scale.
You will also need a high-speed blender such as a NutriBullet or Omniblend V or Vitamix.
Confetti Cakes
RECIPE – Confetti Cakes
RECIPE – Tomato Sauce – with Cashews and Tomatoes
Colourful and light, these are patti-style centre pieces that can be accompanied by any sides or sauces. Below is our lovely mild tomato sauce recipe which is an excellent accompaniment.
Some comments on Ingredients
Use a white bean to emphasize the colours of the other ingredients.
Bean water (aka aquafaba) is used together with flax meal to create a binding agent, holding ingredients together.
Shaping the Confetti Cakes:
Use your hands to make ball shapes, squeezing it tightly, then flatten carefully, keeping the cake from falling apart. alternatively shape as in the video below.
RECIPE – Tomato Sauce – with Cashews and Tomatoes
This is a very flavourful and delicious sauce and packs a real punch when it comes to nutrition. You get the family and friends to eat cashew nuts and tomatoes without them even knowing it! It also uses Nutritional Yeast.
The combination of Confetti Cakes with Tomato Sauce is awesome, although our Cheeze Sauce – Potato & Carrot or White Sauce – Cashew & Cauliflower will do it just as much justice.
